And now we begin to cook the beef itself, it has waited its time for cooking. Place a deep frying pan on the fire, pour sunflower oil into the frying pan and let the frying pan with the oil warm up well. Pour starch into a separate flat plate and roll our chopped meat well in starch. The beef needs to be fried in well-heated oil, laid out in one layer and fried well on both sides, making sure that the pieces of beef do not stick together. Therefore, frying meat will take place in several stages. On each side you need to fry the meat for 5-7 minutes until a golden crust appears. Place the fried meat in a separate bowl.

Recipe 5: Chinese beef in soy sauce

Chinese beef will turn out tender and juicy if it is simmered for a long time over low heat in gravy or sauce. This is a traditional way of cooking beef in many recipes in European cuisine, Hungarian, for example, or Russian. In Chinese cuisine, beef is dealt with much faster and easier. The meat is cut into thin slices, marinated in a spicy sauce and then quickly fried over high heat, stirring constantly. Quick frying, by the way, is the main technique in Chinese cuisine, thanks to which both vegetables and meat retain maximum vitamins.

The marinade for this beef recipe is prepared using orange juice, which acts in the same way as lemon juice - it softens the meat fibers, giving the meat a piquant sourness. Aromatic spices, ginger, garlic and soy sauce complement the taste of meat.

  • beef – 500-600 gr;
  • orange – 1 piece;
  • grated ginger root – 2 tsp;
  • grated garlic – 2 tsp;
  • vegetable oil (or sesame) – 2 tbsp. l;
  • soy sauce – 3 tbsp. l;
  • ground hot chili pepper – 1.5 tsp;
  • carrots – 1 large;
  • bell pepper – 2 pcs;
  • onions – 2-3 pcs;
  • salt – 2-3 pinches;
  • refined vegetable oil for frying – 2 tbsp. l.

Absolutely any beef is suitable for this recipe. Marinade turns out even the toughest meat juicy, very soft and tender, so it's a great way to take a bad piece of meat and turn it into a delicious dish. The beef needs to be washed and cut into very thin long cubes.

To make the marinade, cut the orange in half and squeeze the juice out of the pulp.

Grate the orange zest using the finest grater or zest grater. You will get approximately 1-1.5 tsp. grated zest.

Grate the peeled garlic on the same fine grater. If the cloves are large, you will need 4-5 pieces; medium ones need more. There should be 2 tsp of grated garlic.

Grate the peeled ginger root on a fine grater. Add to marinade.

Season the marinade with chili powder. If very spicy dishes are not to your taste, then reduce the amount of chili by half (add a little more than 0.5 tsp).

Pour refined vegetable oil into the marinade (if you have sesame oil, add it, it will turn out even tastier and more aromatic).

Add soy sauce to the marinade. Mix everything thoroughly and let the marinade stand for 2-3 minutes.

Add chopped beef to the marinade. If the soy sauce is not very salty, then salt the meat to taste. Mix with the marinade, each piece of meat should be coated with the aromatic mixture. Close the dish with meat and leave for 45-60 minutes at room temperature. If the meat is marinated longer (and the more beef is marinated, the softer and tastier it will be), then it is better to put it in the refrigerator.

Before frying the meat, you need to prepare the vegetables for the side dish. Cut carrots and bell peppers into thin strips.

Chop the onion into large feathers according to the height of the onion.

Heat 2 tbsp in a frying pan or wok. l. vegetable oil. First add the onion and fry it over high heat until transparent. Then add bell peppers and carrots. Salt the vegetables, stir quickly and fry for 2 minutes until half cooked. Remove vegetables from pan to warm plate.

Place the beef and sauce into the remaining oil and fry over high heat for 1.5-2 minutes. Then reduce the heat slightly and continue frying for another 1.5-2 minutes until done. The sauce should almost evaporate and thicken. Make sure that the meat does not dry out or burn. Once the beef is tender, remove from the heat and transfer the meat to a plate with the side dish.

Chinese beef should be served as soon as it is cooked; the meat and vegetables should be hot.
